This book presents a rather interesting paradox. How does one write a book for the audience that is least likely to read it?

Madison's target audience is obviously people who do not like tofu. The recipes she uses either disguises the tofu or, in the majority of the cases, fries them insanely so that the taste is hidden beneath grease. Although the book seems like it would celebrate tofu, instead it is based on the underlying assumption that the reader believes that tofu is something gross that should be feared. If you aren't inherently afraid of tofu, the writing style comes across as rather negative.

The introduction has helpful tips about using tofu in general. I was pleasantly surprised to discover new techniques for pressing it although I'm not a tofu novice. Some of her advice is slanted towards her particular tastes, however, and is actually contrary to how most people I know prepare it. She prefers softer tofu, and recommends against freezing it, whereas most people I know prefer to freeze it and have it as firm as possible. Possibly, if she would use those methods, she wouldn't need to deep fry it every time to get it firm and crispy.

The recipes are okay overall, but the tone of the book really put me off. I usually enjoy reading cookbooks, but this one I just use as a reference for the recipes.

I was new to the world of tofu, but not to cooking, when I picked up this book about a month ago; I now use tofu, and this book, every day. The best recipe in the collection, in my opinion, is the Bachelor Sandwich, but there are many others. For the reviewer who deplores the lack of "crunchy" tofu--it's there. Look again. I appreciate the author's extra suggestions and comments, too--they enhance each recipe.

Okay, so I am not a strict vegetarian. But I really do want to like tofu. I dream about the crunchy sesame tofu I order at my local chinese restaurant, but have NEVER liked a tofu dish that I made. This is frustrating since I cook every night, and yet can't stop craving the damn sesame tofu at Orient Garden. I really like Deborah's book _Vegetarian Cooking for Everyone_ and the new _Local Flavors_, but I need the crunch and I can't find it here. Help me! Suggestions--I don't want to buy the pre-deep fried tofu at the Asian market.
